Go To Tomato Sauce

If you have a glut of tomatoes, you can make chopped tomato sauce for the freezer. 1 x half litre bag is about the same as a 400 gm tin of chopped tomatoes.

Ingredients

• 1 kg Fresh tomatoes, chopped or 3 x 400 gm tins chopped tomatoes
• Olive Oil

Method

In a saucepan, gently fry the tomatoes in the oil. They will release all their liquid so that you are broiling the tomatoes rather than frying them. The longer you simmer the tomatoes, the more concentrated the flavour.

Allow to cool then freeze in half litre portions.
