Brandy Cream

It can be expensive to buy Brandy Cream in Spain and after Brexit almost impossible to find. Here is a simple recipe perfect for your mince pies and Christmas cake. It's good enough to eat on its own.

Brandy Cream

Serves: 6 Difficulty: Easy Suitable for: Vegetarians

Ingredients

  • 200ml Whipping Cream
  • 25gm Icing or Caster Sugar
  • 30ml to 45ml Spanish Brandy (depending on taste and strength of Brandy used)

Method

Whip the cream and sugar together until soft peaks, taste to check it is sweet enough, add a little more sugar if necessary
Add the Brandy and whip again until really firm making sure you stop before it turns to butter
Will keep for a day in the fridge
