Recipes from Andalucia


The Mediterranean diet is well known for being a healthy option. The diet consists of fresh vegetables, olive oil, herbs and small amounts of meat, poultry and fish. The less expensive vegetables such as beans, chickpeas and lentils feature prominently in many recipes and the Spanish shopper is always looking for fresh, in season and preferably just plucked from a local smallholding, vegetables rather than the irradiated, tasteless, pre-packed veg from the supermarkets.

In fairness the local family owned supermarkets have always tended to stock local fresh produce and the larger supermarkets are following this trend.

We will bring you two recipes every month using seasonally available, fresh, vegetables. At least one recipe will be suitable for vegetarians or vegans.
